Our Story

Payne & Lesley Gunfield

Payne has always lived and worked in the countryside observing nature at first-hand. Deer management has been an important part of his life for over 40 years. Payne works closely with various wildlife organisations and independent landowners.

Payne and his wife Lesley have a shared passion for wildlife and conservation and manage their farm in an environmentally sensitive way. In the past, other than meat supplied to family and friends, all of our deer has gone into the food chain via a local game dealer. We have now become registered ourselves to process and sell our venison to a wider audience.

We would like our customers to have the opportunity to taste a range of species and we can supply muntjac, fallow, roe and occasionally red deer meat.

 

Conservation

In the UK deer no longer have any natural predators and over the past years their numbers have expanded dramatically. Deer are an important part of our woodland ecology but when their population is too great they inflict serious damage on these habitats impacting both flora and fauna. Payne carries out responsible deer management with an innate understanding and respect for the deer. Our venison comes from our local region as part of sustainable wildlife management programmes.

 

Butchery

All of our venison is fully traceable and handled solely by ourselves from carcass to point of sale.

Venison is a wonderful and sustainable resource - extremely tasty, high in protein and low in fat.

Venison from different deer species has unique eating qualities which is why, apart from sausages and mince, all our venison is supplied species specific. We offer a full range of cuts including dice, mince, loin and leg steaks, whole haunches, offal and much more.
